Jonathon always my favorite! Good results with Northern Spy. I actually get best flavored pie from even mixing 2-3 varieties. And I also do that when making chunky applesauce. Mixing a tart with a somewhat sweeter variety is a good plan. To ensure pie is not runny it helps to precook filling for about 10 min or so, let cool then add to crust for baking. It pays to use generous amount of apples so filling fills up crust and does not sink after baking.
