I like Pink Lady apples for pie. They may bake up a bit firm for some people but I love that crips bite of apple. I also pre-bake my apples. Give them a little sugar and a lot of cinnamon with a good squeeze of lemon. Bake for about and hour at 350. Use in a pie or freeze for later use. No dome of crust to collapse because the apples shrunk.
