I love this post! For decades I've favored McIntosh, truly a classic apple for me. I like the soft, vaguely firm texture it becomes as a pie. For me it is the "old-timey-est" taste for a comfort pie. I like others, but not excessively firm apples. I am finally delving out of my comfort zone this weekend and making a 7" Granny Smith Apple Pie for myself. I look forward to it!
