Hi Jessie, most of our recipes that call for pre-cooking the apple filling don't include a step for cooling the filling. That being said, it might be best to stir the filling a few times once it's off the stovetop to release some of the heat. You don't want to melt the fat in the crust, but as long as the pie goes into the oven within a short time frame, it should be just fine. Happy baking! Kye@KAF
