Never ever use less than 2, preferably 3 varieties. We grow our own Mac, and Rome. Add Cortland or Macoun makes great flavor. Using my food processor slicing blade makes thin slices that pack tightly and so all but eliminate crust gap. I'm told I bake a damned good pie. 🤗🤗🤗
