Definitely Pippins! They're hard to find here in Oregon, but I was able to get some from a friend whose family grows them in Watsonville, California. My grandmother taught me to make pie with one rule.... pippins and a sweeter variety. I like the way they hold together without being too firm and they add a nice balance with their tartness.
