I am from "upstate" NY but now live in Denver, CO. I used 20 oz. Apples - large, tart, great pie apples that I can't find here but also like so nany others mentioned, combined them with Macs or Cortlands.
I haven't made an apple pie in a couple of of years but am inspired by this post to give it a try. Thanks everyone!
