In my area of southern Illinois the most common apple is Jonathan & I've always used it for pies. The flavor is great and now that Jonagolds are growing here more & more I'll also use them. Northern Spy are one I really like & have bought it when travelling when they are in season. My mother used Rome Beauties back in the 40's & 50's so I am guessing it is one of those 'old fashioned' varieties that isn't around any more.
