Midwest here, not all varieties are available. I bought Gingergold once a few years ago and never saw it offered again!
For apple crisp, large batch, I buy 2 each of most baking apples at the stand and pile then in layers. It is delicious.
For pie I’d suggest 2 Granny Smith apples to 1 Cortland and 1 Gingergold or Golden Delicious ratio for a decent blend.
