Here's another vote for Macouns. If i can find them, i combine them with Cortlands for pies and crisps.I might add a Granny Smith or, at most, two, for firmness and tartness, but Grannies are not my favorites. When cooked, they look a little grey to me. Even for eating out of hand, i think their peels are tough and astringent.
