Hi Cathleen, there's no apple variety that we'd say needs to be ruled out because of juiciness, but Winesap, McIntosh, Fuji, and Jonagold are all known for being quite juicy (which is sometimes a good thing!). If you're ever worried about getting the right balance of flavor, texture, and juiciness, you should opt for a blend. That way you'll have all your bases covered. Kye@KAF
