The metric that I always want to know but isn't typically reported is JUICINESS! It's something that can be a problem! Any warnings about apples that are overly juicy for pie?
On taste, I like to mix something mealy with a pippin -- but I like a super-tart apple pie. Another good one (to mix in) which is available in NY in the fall is the Paula Red.
