I think any pie made with just one variety is rather "one note." Here in Michigan, we're up to our eyebrows in varieties. For pies, my usual blend is Northern Spy, Ida Red, and Empire or Red Rome Beauty. Though the one in my oven right now is Spy, Snow Sweet, and Ruby Mac.
