Here on Southern California we do not have the apples you have in the East, with the exception of Granny Smith, Gala, Golden and Red Delicious.Have never seen any of the others you mention. I always mix Galas, or any other red one I might have on hand and Granny Smith, my favorites. I like the combinations I make, adding brown & white sugar and spices. I do not like to eat raw apples.
