I love my McIntosh in pies and usually do throw a couple of another type in when I bake Mcpies. However, in the beginning of the pie season there is an unparalleled apple for pies. I refer to the Red Gravenstein. You can keep your Granny Smith and all the others. It's a fairly old type, but should be more available. Luckily I have a local orchard, Cardigan Mountain Orchard, here in the mountains of NH that grows them.
