Mary, sorry, we don't know about the effect various types of apples will have on your digestive system; that would be a question for your doctor or a dietitian. I chopped the apples while doing this particular test, but usually slice them using an apple peeler/slicer. I think the key is even pieces, whether you're chopping or slicing; you already seem to be doing that, so if by "nicely cooked apple" you mean softer, I'd suggest you use apples that soften a lot as they bake; or simply bake your pies longer.
