To me, my favorite apple is the Wealthy. I have never seen it in the stores for purchase, but if a person times it right, you are able to get it at the local orchard here. Not sure if they even have an abundance amount when ripe. The apple is pretty sour so it needs no lemon juice to make it tart, but lots of sugar and it cooks up to the point of no shape left to the slices. Maybe others prefer that apple for sauce, but I enjoy it for pie, also.
