Hi Sonia, I am also a big fan of the Ghirardelli brownie mixes and I am also a professional baker. I have found that the Ghirardelli mixes are the closest thing to brownies from scratch. However, I can never leave a box mix alone, I always have to tweek it a bit. I usually buy the Ghirardelli box mix that includes the chips and chocolate syrup. The first thing I do is sift the chocolate chips out of the dry mix. (TIP: I sift all box mixes before I make them it helps improve the final texture of the bakes good) I’m not a fan of large chocolate chips in my brownies because the brownies are soft and the chips are usually hard. So I put the chips aside and to the dry mix I add 1/2 tsp espresso powder (will help boost the chocolate flavor and cut the sweetness) I also add a touch of cinnamon(it adds that extra little flavor something to the flavor of the brownie) Then I make the rest of the brownie like it says on the box. Once the brownies come out of the oven and cooling I take a glass measuring cup and warm up 1/4 c. of half n half or heavy cream. Then I add the chocolate chips until they are melted and you have created a ganache. Pour it over the brownies and spread it over the top of the brownies. Then I add any extra goodies like cut up candy bars, sprinkles, nuts, choc chips, and I like adding drizzles of melted white chocolate. I hope this idea helps you with your next batch of brownies. BTW the FUDGY BROWNIE RECIPE is the closest to the Ghirardelli mix. Plus you can use any of my tips with the “from scratch” brownie recipes.😉
