Hi Christy, I'm sorry to hear your focaccia stuck to the pan! Lining the pan with greased parchment paper, especially with recipes that contain cheese, can help avoid this from happening in the future. As far as the rise, it's not a huge riser, but you should definitely see some puffing up. Did you use our Gluten-Free All-Purpose flour and xanthan gum in this recipe? Substituting a different type of gluten-free flour could have contributed to a denser result. I would also recommend either weighing your flour, or using this method to measure your flour by cups.
