Hi there, Roger! That is so kind of you to want to make gluten-free focaccia so your friend can enjoy one of these sandwiches like everyone else! This bread should be sliceable for sandwiches, but if you prefer a bit of a thicker bread with your sandwich you could try baking it in two, 8" pans so it'll rise a little higher. Happy baking!
