Therese, Are you baking in glass or ceramic? This is usually the cause of uneven baking throughout the loaf. We recommend baking in a medium-colored metal pan for the most even baking results. You can also consider covering the loaf with foil about halfway through baking to prevent the edges from over-baking. A last option? Turn the temperature down by 25°F and extend the baking time by about 5-10 minutes, or until a toothpick inserted into the center comes out clean. Happy baking! Kye@KAF
