Hi Laurie! It should be just fine to use your pasta roller attachment to roll out cracker dough. If the herb and other additions are mixed in well with the dough, they shouldn't come out while going through the roller. You could also consider keeping a small portion of the dough without and additions off to the side and roll that one out last to pick up any stray seeds or herbs that might remain.
