These turned out fabulous, and it felt good to use that starter rather than toss it into the trash. This will be my new go-to for used discarded sourdough starter. And BTW: I saw a technique for making super-thin and evenly rolled cracker dough: rubber bands! I slide thick rubber bands on the ends of my french rolling pin. Then I roll the cracker dough out on a Silpat (silicone baking sheet). The thickness stops at precisely the thickness of the rubber bands on the ends of the rolling pin. Thanks for a super recipe.
