Hi Kathleen! For best results, we'd recommend making the recipe all in one day. You're welcome to try breaking this recipe up into two days though! We'd recommend making the dough, letting it rest at room temperature for about 20 minutes, and then popping it in the fridge to finish rising overnight. The next morning you can take the dough out of the fridge and pick it up at the shaping step. The second rise will likely be longer than listed in the recipe because the dough will cold.
