Hi Heather, if you're talking about a rolled cake, like our Pumpkin Cream Cheese Roll recipe, we'd recommend sticking with the Unbleached All-Purpose flour called for in the recipe. However, if you're thinking of making our Cinnamon-Swirl Pumpkin Rolls, you could certainly substitute Bread flour for the AP flour called for. In this application, to make sure the dough is soft and supple, you will likely need to add an additional 2 teaspoons (10g) water for each cup of Bread flour substituted.
