Hi Sydney, our Crumpet recipe calls for our Unbleached All-Purpose flour, which will make for a more tender and holey crumpet, but if you wanted to try substituting our Bread flour, I would recommend adding about 3 tablespoons extra liquid to this recipe, to adjust for the fact that the Bread flour will absorb more liquid.
