Hi Sharon, I wouldn't recommend using bread flour in cookies that are meant to be very delicate and light, but for cookies that you don't mind a little more chew and less spread, it can be a good choice. You'll even find some cookie recipes that call for bread flour, like our Sourdough Chocolate Chip Cookies or our Buttery Snickerdoodles.
