Thank you, This article is helpful. I found a terrific youtube channel from a retired chef in the northern UK. His bread recipes look delicious, but all call for 'strong' ie 12.7% protein bread flour. All I have is AP. Of course, he can't guess if substitution is ok, but based on this article, I'll give it a whirl. Cross fingers!
Now I have to see why you brominate the lour....
