Hi Florence, this can be tricky when you're making yeast-raised or sourdough baked goods, because neither almond flour or coconut flour provide gluten, which plays such a big part in the rise and structure of bread recipes. We generally don't recommend substituting either of these flours in those type of recipes. If you're able to tolerate wheat, you might want to consider using our Keto Wheat Flour for bread baking. Here's a Keto Friendly Bread recipe that utilizes this flour, and you can consult the nutritional information (link below the ingredients) to see if this would fit with your dietary requirements. We also have other Keto mixes for those who are on low carb diets, and quite a few Keto-Friendly Recipes as well. If you need to be gluten-free, our  Paleo Measure for Measure flour might be suitable for you, but we don't recommend using this as a substitution flour in bread/pizza/rolls recipes that call for yeast or sourdough starter, for the same reason I mentioned above.
