You can use any of those flours for pizza dough just as you would bread dough, as they're both yeast doughs. Bread flour and whole wheat flour both absorb more liquid than all-purpose, whole wheat flour a bit more than bread flour so you'll find you have a had a little more water if you use whole wheat.
