I've made cookies with bread flour before. They taste okay. I also made pie crust with bread flour. Ew. That was a disaster and a half. Sally's Baking Addiction is a website where she gives tips on substitutes. She talks about lightening bread flour with cornstarch, as a make-shift substitute for the lighter pastry flour needed for pie crusts.
