Elliott, you could certainly try that! We'd suggest first trying as written but omitting the potato flour, which is there specifically because it makes the bread softer. You may find that does the trick on its own, or that you'd still like to add a little more oomph to the dough by using bread flour. Happy baking! Kat@KAF
