Great information! I recently made a kolach for the first time and used the 2 cups of bread flour I had on hand with 4 cups of all purpose. It came out nice and high with a lovely crumb. I was wondering if the use of bread flour added to the success of the bread. So now I think I'll try using all bread flour next time. I only trust King Arthur flour and my local grocery stores don't always have the type of flours I want in stock, nice to know I can substitute in a pinch.
