Hi Mike! Bread flour can give you a higher rise and chewier texture if that's what you're looking for. If you're using bread flour in place of all-purpose, you'll want to add about 2 teaspoons of extra liquid for every cup of flour. SAF Gold Yeast is fantastic for any sweet, enriched doughs that include a lot of milk, butter, eggs, and/or sugar. Cinnamon rolls are a great opportunity to use that yeast. Happy baking!
