Hi Kara, welcome to the world of homemade panettone! You're in for a delicious treat. We recommend using King Arthur All-Purpose Flour when making panettone so that the final product is tender but still rises high. Cake flour is bit too soft (low in protein content) to give your panettone the support it needs.
