Hi, Candace. All of our flours are unbromated; it's not a chemical we've ever used. I agree, the bread flour could well be a secret weapon in a zucchini bread. You can also squeeze extra liquid out of the zucchini after grating it, which would give the leavened less to push against and give you a taller loaf. Susan
