I am wanting to make my own pizza dough. I have heard bread flour is best, though most I've found recipes call for AP. Also, many of the recipes make way more dough than I need being that I am cooking for one. It sounds like subbing bread flour for AP is not a big deal, what about freezing and at what stage in the process should I freeze it?
