Hi Jane, as we outline in this article on our blog, using bread flour may impart a slightly chewier texture in your baked goods because of the higher protein content. If you like chewy cookies, then you're in for a treat! We don't recommend using bread flour in cases where you're hoping for a soft and tender final texture (cakes, pastries). If you find the cookie dough made with bread flour feels dry or stiff, feel free to add a few teaspoons of additional water or milk if necessary. Your cookies are going to be delicious. Happy baking!
