Hi Tom, the key to making your dough nice and smooth is using just the right amount of flour. If your dough stays lumpy and craggly, there might be a bit too much flour in the dough. To ensure you're using the right amount, we recommend either measuring your flour using a scale or using this fluff and sprinkle technique. This way each cup of flour will weigh about 4 1/4 ounces, and the dough should become smooth after a few minutes of kneading. Another tip? Be gentle with the dough. When you press too hard and tear the slightly floured skin of the dough, the sticky inside becomes exposed and it becomes messy to work with.
