Thanks for sharing your experience, Betty. European Flours are classified differently, so it can be challenging to find an exact match. Our French Style Flour Type has a protein content of 11.5% and .7 ash -- similar protein content to All-Purpose Flour but higher in ash, which indicates that the flour is higher in minerals (since it's milled closer to the bran), and which gives this flour a deeper flavor than all-purpose.
