Nancy, this is the biggest challenge in gluten-free baking--coming up with bread and roll recipes that replicate the texture and rise of baked goods made with wheat flour. In some ways, this is an impossible task, but we will certainly keep on trying! Here's a gluten-free roll recipe that will work nicely in your bun pan. Barb@KAF
