Jill, we don't have very many low salt/sugar recipes. Clearly this is an area we need to work on! In general you can reduce the amount of sugar in a recipe by 10% without causing any significant issues. Salt can also be reduced in most pastries and cakes, but in bread and roll recipes that call for yeast, salt plays a very important part in flavor and structure, and also helps to control fermentation. In a a recipe that calls for yeast, I would not recommend reducing the salt by more than half. Some people find that almond flour recipes provide a nice way to lower carbohydrates.
