Hi Pat, I would recommend using a 9" round cake pan if you'd like to make a half recipe. Shredded apple is going to add some extra moisture to the filling, but as long as you don't add too much, it should be okay. Or check out our recipe for Apple Swirl Rolls, for an apple filling that is cooked to reduce the added moisture.
