Hi Meryl! You'll definitely be in the realm of experimentation. We'd say it's pretty safe to replace the sugar in the dough with mashed banana, but beyond that, you'll have to use your best judgment. You can try to just add some in, maybe one banana's worth, knowing that the dough may be stickier. Try not to add extra flour into the dough while it's mixing if possible, but rather use more bench flour when you go to roll it out. Happy experimenting! Annabelle@KAF
