Alex, if you want to add some sourdough into a recipe that also uses the tangzhong method, start by preparing the tangzhong starter and then add sourdough starter to the dough. In this case for Soft Cinnamon Rolls, make the tangzhong starter and then add all the other ingredients to the dough, using only 1/4 cup of milk and about 3 cups + 2 tablespoons of flour. Add 1 cup of recently fed, healthy starter to the dough, and adjust the consistency by adding more flour or water until the dough is just slightly tacky to the touch. Good luck and happy baking!
