Rhubarb Jelly Roll: got appreciative comments from my husband. I think it made a wetter filling than optimal. When I try it again, I'll reduce sugar a bit in the compote and give the mixture a good mashing before spreading on the cake. I used 4 cups (1 lb.) of prepped rhubarb with 2 cups of sugar (already reduced from your recommendation) and thought that might still be a little too sweet for my purposes.
