I'v never make a comment on anyone's recipe!!!! I have green with some red rhubard.I make freezer jam,much like ur compote on the stove,6 cups of rhubard with for 3 cups sugar(-I use 2-21/2 cups). When rhubard is soften,I mash it a bit with a potato masher and Add a 4 oz package of sugar-free strawberry jell-o and mix together It adds that red color.( I've made ice cream,sorbet and whatever) after you add the jell-o place in a glass clean jars and apply lid and freeze!!!!!! Then you can use it anyway u want. I hope this helps your customers.
