Shredding the apples will give you a different texture but would work great, Pat! I'd be a bit worried about adding more than one or two tablespoons of apple butter as too much of a good thing (and apple butter is definitely a good thing) can throw the balance in a recipe off. Try adding just a bit to start and see how you like it. You can always add more the next time you have a few apples laying about!
