Hi Ashwin, because croissant dough contains yeast, this isn't the type of recipe we would recommend substituting our Gluten-Free Measure for Measure Flour into. However, we have been making strides with our new Gluten-Free Bread Flour, and ultimately, we will probably develop a croissant recipe that utilizes this flour to make croissants. So far, we have a recipe for Gluten-Free Puff Pastry. However, it is likely to be tricky substituting even the GF Bread Flour into this type of recipe, so I would stay tuned for future developments!
