Hi there, Shirley! We don't recommend using our Gluten-Free Measure for Measure Flour to converted yeasted recipes to be gluten-free because it doesn't create a strong enough structure to go through two long rise times. We do have a collection of gluten-free bread recipes that were developed specifically for our Gluten-Free Measure for Measure Flour, you can check them out here. We hope this helps!
